Eliminating complexity through time and heat. The solo grain, Maris Otter, fizzes with the mash for a long soak. Part of the first feed was boiled and reduced, triggering the Maillard reaction; allowing the vigorous heating of sugars to add a deeper color and flavour. Continue cooking for a long time to increase the reaction. A prolonged 24-month nap in Bourbon casks completes this luxury award. Enjoy the warm embrace of Prodigality with notes of burnt sugar, sweet plum, oak and leather. 2022 was partially aged in rye whiskey barrels.
