 
                  Spontaneously fermented and terroir-driven cherry mead, made with Stevnsbær.
No added water or yeast (fermented exclusively with the yeast and bacteria naturally present on the cherries).
Due to both the nature of spontaneous fermentation and the use of various vinification methods in the final blend, this release will exhibit a greater range of differences between vintages than many of the other releases.

Local cherries with 11 days of skin contact in the must, along with local wildflower honey, are the only ingredients. The product was made in many small batches, produced using various techniques, and later blended:
For this vintage, one strand was cold-soaked, one carbonic acid-soaked, while the rest underwent a normal spontaneous maceration and conditioning phase. A smaller portion was also aged on French oak spirals. They were all blended in carefully considered proportions based on taste, to bring out the best in all the "band players."
This vintage is fresher and fruitier, and contains fewer oxidative elements than the 2020 release. Along with a very clear and concentrated expression of the Stevnsbær cherries, you get incredibly deep caramel and chocolate notes.
