De kersen hadden 14 dagen huidcontact in de most, samen met lokale wilde bloemenhoning als enige ingrediënten. Op dat moment worden de kersen normaal gesproken voorzichtig geperst om de vloeistof van de vaste stoffen te scheiden. Maar deze keer werd alleen sap uit vrije uitloop gebruikt.

Het resultaat is een uitzonderlijk pure en krachtige expressie van de kersensoort "Fanal".
