MULDER'S NIGHTMARE (2021)

Blackberry and raspberry mead aged in OHD aquavit casks (partially cryo-concentrated fruit + a portion of caramelized heather honey)
This is MULDER'S DREAM on steroids. In terms of work, this mead kept them up all night. Some of the fruit was freeze-concentrated to remove some of the water and give you a full flavor concentration. The honey content couldn't have been worse, so to make it even more complex, the wildflower honey was supplemented with caramelized heather honey. After fermentation, they drove to their friends at Oslo Handverksdestilleri and retrieved their most fragrant, recently emptied aquavit cask.
Extremely dense and coating on the palate, with a deep, almost abrasive acidity. Fresh and ripe—yet tannic—raspberries and blackberries, held in check by sweet wildflower honey, reminiscent of a flowering meadow. Followed by lingering flavors of caramel, camphor, and light spicy notes from the caramelized heather honey and aquavit cask.
