For this Peach they macerated red O'Henry peaches in lambic aged two, three and four years for almost five months. And they mixed with even more four-year-old lambic. This ensures that the weighted average of the entire blend is almost 34 months after bottling.
The final fruit share is 390 grams of fresh peaches per liter of finished Red Peach. 3 Fonteinen Peach is the slow maceration of hand-picked full peaches on traditional lambic. Without added juices, syrups or sweeteners. Unfiltered. Unpasteurized.
