Our solera program is approaching its 3-year mark, and the flavor just keeps getting better. This barleywine—now a blend of three separate brews—exhibits wonderful notes of rich malt, grapes, plums, figs, raisins, and caramel. The blend consists of 34% beer aged for 29 months and 19 days in our solera barrels (two 500L tawny port casks and two 500L sherry casks); 24% beer aged for 11 months and 16 days in Penelope bourbon barrels (with a red wine finish) followed by 18 months and 3 days in our solera barrels; and 42% beer aged for 17 months and 21 days in Penelope bourbon barrels (with a red wine finish), subsequently aged for 11 months and 28 days in our solera barrels.
