A blend of spontaneously fermented beer (2023) and beer inoculated with yeasts isolated from honey. Aged in oak barrels, followed by a three-month maceration on sour cherries. Ingredients sourced from Quebec. Brewed with unmalted wheat (35%) and barley malt (65%). Bottle-conditioned with organic raspberry blossom honey from the Gaspé Peninsula.
