Port, PX Sherry, and Whisky
One of the most luxurious barrel-aged stouts. This blend combines a Belgian stout aged for 27 months in port casks (raisin, red fruit, walnut), a rye stout aged for 9 months in PX sherry casks from Bodegas Fernández-Gao (caramel, fig, spice), and a multigrain wine aged for 22 months in Wyoming whiskey casks (oak, fudge, vanilla warmth).
The secret of this beer lies in its extra dimension: a homemade syrup of steamed dried fruit—plums, figs, dates, apricots, and peaches—slow-cooked into a velvety compote that seamlessly blends with the character of the cask. The result is a rich, layered profile where the sweetness of fortified wine, the spice of sherry, and the warmth of bourbon mingle with dark fruit, toffee, and chocolate in an oily body and a long, warming finish.
