Quimera Escarlate

They brew their barleywine base and let it ferment for 18 hours to develop the thick, intense caramel flavor. They blended this barleywine with a stout base that had just been based on the Infinite Chocolate Theory, creating dense layers of complexity and flavor. After the blend, they add an absurd amount of pecans and toasted coconut, along with a very subtle hint of cinnamon. The result is a dark, complex Tom Ruby brew, with aromas of walnut cookies, chestnuts, caramel toppings, and a deep, full flavor.
