Geïnspireerd door de traditionele "Hummingbird Cake" afkomstig uit Jamaica - bedoeld om de productie-industrie van het eiland onder de aandacht te brengen en vernoemd naar de nationale vogel van het eiland.
Deze Imperial Stout werd gerijpt in een Bourbonvat van lokale favorieten, Old Monroe Distilling Co., en vervolgens geconditioneerd op bananen, ananas, kaneel, Madagascar-vanillebonen en op het landgoed geteelde geroosterde pecannoten.
